Loaded Roasted Potato Casserole

Report
The Loaded Roasted Potato Casserole is a creamy, cheesy dish featuring tender russet potatoes mixed with garlic, cream cheese, sour cream, and chopped bacon. Baked to meld the flavors and topped with melted cheddar and green onions, it offers a rich, comforting side dish texture. Its hearty ingredients make it suitable for a mainstay accompaniment in meals that call for a warm, savory potato option.

Description

This casserole starts by boiling peeled, diced russet potatoes until just tender, then combining them with garlic, cream cheese, sour cream, butter, milk, and seasonings. Adding most of the cooked and crumbled bacon along with shredded cheddar cheese creates a rich, creamy mixture. After placing this mixture in a greased baking dish, it bakes until bubbly and slightly browned. Extra bacon and cheese on top melt further during a short finishing bake.

The result is a thick, smooth casserole with soft potato pieces enveloped in a cheesy, garlicky sauce, complemented by smoky bacon bits and topped with fresh green onions for brightness. The dish lends itself well to holiday dinners or family gatherings, pairing with meats or served as a stand-alone hearty side.

Leftovers keep well refrigerated for up to one week, making it convenient for planning ahead or reheating. Checking potato tenderness before baking ensures the casserole maintains a pleasing texture once cooked fully.
