Description
This recipe begins by halving and boiling Idaho potatoes until tender. The boiled potatoes are then transferred to an oiled baking sheet and smashed to about half to three-quarters inch thickness. Coated with olive oil and seasoned with salt and pepper, they are baked at 400°F to develop crisped edges. After baking for 20 minutes, shredded cheddar cheese and crumbled cooked bacon are sprinkled on top and returned to the oven for an extra five minutes until the cheese melts and becomes bubbly. The finished potatoes are garnished with sour cream and chopped green onions to add creaminess and freshness.

Ingredients
- 4 medium potato Idaho variety
- 3 tablespoons olive oil
- salt to taste
- black pepper to taste
- 1 cup cheddar cheese or marbled cheese, grated
- 1/2 cup Bacon cooked and crumbled

- sour cream totally necessary in my opinion, optional
Instructions
- Half potatoes and boil in large pot of salted water until fork-tender, about 15 minutes.
- Drizzle half of the olive oil onto a baking sheet. Drain potatoes and place onto baking sheet. Using a potato masher, flatten potatoes to about 1/2-3/4 inch thick. Brush tops with remaining olive oil and sprinkle with salt and pepper.
- Bake at 400 degrees for 20 minutes.
- Remove from oven, sprinkle with cheese and bacon and return to oven for another 5 minutes to melt the cheese. Top with sour cream and green onions and serve.
Notes
- Idaho potatoes work well for their texture, holding shape when smashed yet becoming tender.
- Cook bacon ahead to desired crispness before adding as a topping.
