Description
This recipe starts with slicing sweet potatoes into long, quarter-inch thick fries that are coated in olive oil, ground cinnamon, and sea salt. Baking at 400ºF crisps the edges while keeping the centers tender. Halfway through baking, the fries are turned to ensure even cooking and browning.
Once baked, the fries are sprinkled with smoked Gouda cheese that melts quickly in the hot oven, adding a smoky, creamy layer. Chopped pecans add texture and a nutty flavor contrast. The accompanying yogurt sauce combines plain yogurt, finely diced garlic, sea salt, and sliced green onion tops or chives, adding tang and freshness when drizzled over or served alongside.
Pre-shredded cheeses with additives may not melt well, so freshly grated smoked Gouda is recommended for proper melt and flavor. Avoid broiling extra-creamy smoked Gouda, as it can harden instead of melting smoothly.
Ingredients
Sweet Potato Fries:
- 1 pound sweet potatoes white or orange, scrubbed clean
- 1 tablespoon olive oil
- ½ teaspoon ground cinnamon
- 1 teaspoon salt sea salt
- 4 ounces smoked gouda Or swap in regular Gouda, freshly grated
- ⅛ cup pecans chopped
Yogurt Sauce:
- 1 cup PLAIN yogurt
- 2 garlic cloves, finely diced
- sea salt pinch
- 1 tablespoon green onion tops or chives, finely sliced
Instructions
- Preheat oven to 400ºF. If desired, peel potatoes (optional). Cut the potatoes into long slices, about ¼" wide and deep.
- Lay the fries in a single layer on an unlined baking sheet. Drizzle with olive oil and sprinkle with cinnamon, and then toss with your hands to mix the spices.
- Bake fries for 20 minutes, and then turn the fries. Bake 5-7 more minutes, or until golden. (Bake time will depend on how crispy you want your fries.)While the fries bake, mix together all of the yogurt sauce ingredients.
- Sprinkle the fries with salt, and top fries with the Gouda. Slide the fries back into the oven for about 2 minutes, or until the cheese is melted.Top with pecans. Drizzle some of the yogurt sauce over the fries, and serve the rest on the side. Serve immediately.
Notes
- Use freshly grated smoked Gouda for better melting; pre-shredded cheese often contains stabilizers that hinder melting.
- If you have extra-creamy smoked Gouda, it may not melt well under the broiler and can harden; it's still tasty even if unmelted.
- Adjust bake time to achieve your desired level of crispiness.
- The yogurt sauce adds a refreshing complement; drizzle some over the fries and serve the rest on the side.
