Loaded Tater Tot Bites

Loaded Tater Tot Bites are crispy baked mini tater tot cups filled with melted cheddar cheese and diced bacon, finished with a drizzle of ranch dressing and sliced green onion. Baking the tots twice forms a cup shape with crispy edges that hold savory toppings, offering a rich, bite-sized appetizer or snack with a combination of salty and creamy flavors.

Description

This recipe begins by placing frozen tater tots into a greased mini muffin tin and baking briefly to soften and begin crisping. The tots are then pressed down to form cup shapes, which are topped with shredded cheddar cheese and cooked diced bacon. Returning the filled tots to the oven melts the cheese and crisps the edges further, resulting in a firm yet tender base that can hold toppings. The final touch of ranch dressing and green onion adds creamy tang and freshness.

Loaded Tater Tot Bites serve well as finger food for parties or snacks, with flexibility to customize toppings like chili, vegetables, beef brisket, BBQ sauce, or sour cream. Their handheld portion and combination of textures—crisp tot edges and melted cheese—make them appealing as an indulgent treat or casual appetizer.

Ingredients

Servings
  • 48 tater tots frozen
  • 1 ½ cups cheddar cheese shredded
  • ½ cup Bacon cooked and diced
  • ½ cup ranch dressing
  • green onion thinly sliced

More Topping Ideas

  • chili
  • white onion peeled and diced
  • broccoli cut into small pieces
  • cottage cheese
  • beef brisket chopped
  • BBQ sauce
  • sour cream
  • chives chopped

Instructions

  1. Preheat the oven to 425 degrees F. Grease the cups on a mini muffin tin with non-stick cooking spray.
  2. Place three tater tots in each muffin tin cup. Bake for 10 minutes.
  3. After 10 minutes, remove the muffin pan from the oven and use a tart tamper to press the tater tots down into each cup. (You can also use a muddler or the back of a measuring spoon.) This will form the tater tots into a cup shape to hold the toppings.
  4. Fill the tater tots with the cheese and bacon (or whatever toppings you like).
  5. Place the tater tots back in the oven. Cook for another 15 to 20 minutes or until the tots are golden brown and the cheese is melted.
  6. Remove from the oven and let cool for at least 5 minutes. Drizzle ranch dressing over the tots and sprinkle with green onion before serving.
