  • cup tarragon loosely packed, leaves
  • 1 garlic grated or finely minced, small clove
  • ½ lemon juiced
  • ½ cup mayonnaise
  • salt to taste
  • black pepper to taste

For the Fritters

  • ¾ cup all-purpose flour
  • ¼ cup corn starch
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt
  • ¾ cup buttermilk
  • 1 egg large
  • 1 lobster meat claws and tail, coarsely chopped, packed cup
  • 1 corn kernels removed from the cob, ear
  • 2 tablespoons chive minced
  • vegetable oil for frying
  • salt for sprinkling
  • lemon for serving, wedges
