Lokše Potato Flatbread

Today, I am taking you to Slovakia! This small European country borders the Czech Republic on the eastern side. We will be making their famous potato flatbread, called Lokše.

  • 1 pound potatoes skinless boiled
  • 1 cup all-purpose flour plus for dusting worktop while rolling up the potato dough
  • ¼ teaspoon salt
  • pork lard or goose lard / butter, for topping cooked lokše
  • ½ cup plum jam or other solid jam, for filling

Instructions

  1. Peel 1 pound potatoes and boil them in lightly salted water until tender. Allow them to cool down. Finely grate the cooled potatoes using a hand grater with small holes.
  2. Add 1 cup all-purpose flour and ¼ teaspoon salt to the grated potatoes, and mix until you have a smooth, non-sticky potato dough.
  3. Divide the dough into equally sized pieces. Dust the work surface with flour. Roll out each piece of dough into a thin circle, approximately 8 inches (20 cm) in diameter.
  4. Preheat an iron skillet over medium-high heat. Fry each Lokše on the dry pan, cooking both sides until golden brown.
  5. Brush the hot Lokše on both sides with melted pork lard or butter. Allow them to cool for a while, then spread with jam, roll them up, and enjoy!

Notes

  • Makes about 6 lokše.
  • When preparing Lokše, add just enough flour to the grated potatoes to create a non-sticky dough. Be careful not to add too much flour, as this will make the pancakes dense.
  • Properly prepared potato dough will puff up during frying, creating blisters on the surface, ensuring that the Lokše will be perfectly soft and tender.
  • Between frying each Lokše, wipe the pan clean of any leftover flour to prevent it from burning.
