London Broil Marinade
Description
This marinade mixes acidic balsamic vinegar with olive oil for moisture, Worcestershire sauce and Dijon mustard for depth and tang, and minced garlic along with salt and pepper for seasoning. The London broil is placed in the marinade, then refrigerated for a minimum of 4 hours, but preferably overnight for maximum flavor infusion and tenderization.
The meat is cooked over medium-high heat on a grill or broiler to develop a charred exterior while keeping the inside rare to medium rare, depending on thickness and preference. The steak is rested post-cooking to retain juices and then thinly sliced against the grain to ensure tenderness.
The marinade’s combination of ingredients provides a balanced acidity, savory aroma, and slight sharpness, complementing the robust beef flavor without overpowering it. This preparation is ideal for a flavorful steak dinner.
Ingredients
- 3 lbs London broil
- 1/2 cup balsamic vinegar
- 1/4 cup olive oil
- 2 Tbsp Worcestershire sauce
- 1 Tbsp Dijon mustard
- 1 Tbsp garlic minced
- 1 tsp salt
- ½ tsp black pepper
Instructions
- Combine all the ingredients together in a small bowl.
- Place the London Broil in a large ziplock bag, pour the marinade over the top, seal and marinade for at least 4 hours but overnight is preferred.
- Heat the grill over medium high heat. Remove meat from the refrigerator and let sit at room temperature for 30 minutes.
- Cook over medium high heat to get a good char on the outside while the center remains rare to medium rare. About 5-7 minutes per side for an approximately 1" thick London Broil. A thicker piece of meat will need a longer cook time.
- Cook until it reaches internal temperature of 125-145 degrees depending on how you like your meat prepared.
- Remove to cutting board and allow meat to rest for 10 minutes. Do not cut until the meat has rested.
- Cut across the grain in thin slices for perfectly tender steak.
Notes
- Broiling is an alternative to grilling, requiring 4-6 minutes per side at high heat for a 1-inch thick steak.
- Cook to an internal temperature between 125°F and 145°F according to desired doneness.
- Allow meat to rest for 10 minutes before slicing to retain juices.
