Loose Meat Sandwich (Maid-Rite Copycat)

The Loose Meat Sandwich features seasoned ground beef simmered with water, mustard, sugar, and onions to create a tender, saucy filling. Served on soft hamburger buns, the mixture is loosely piled for a moist yet flavorful sandwich. The dish hinges on balancing savory, slightly sweet, and tangy elements, making it an easy-to-prepare casual meal.

Description

This Maid-Rite Copycat recipe cooks ground beef with water, yellow mustard, and sugar until the meat is fully browned and tender. Finely chopped onion is stirred in towards the end to retain some texture and bite. Seasoning with salt and pepper rounds out the flavor profile. The cooked beef mixture can be served on hamburger buns with optional toppings like ketchup, mayonnaise, pickles, and extra onions.

The cooking process keeps the meat moist but not greasy, with water and mustard creating a slight sauce that coats the beef. Leaving the onions somewhat raw adds a crispness contrasted by the soft bread. This loose meat filling differs from typical crumbled burger patties by its saucier consistency and hot, sloppy presentation.

The sandwich suits informal meals or gatherings and can be made in advance. Leftover filling reheats well and freezes for convenience. Optional variations include slow cooker preparation and adding Worcestershire or soy sauce for depth. Prepared buns can be toasted or buttered based on preference.

Ingredients

Servings
  • 1 pound ground beef (85/15 recommended, see note 1)
  • 1/4 cup water
  • 1 tablespoon yellow mustard
  • 1 teaspoon granulated sugar
  • 1/2 cup onion finely chopped, plus more for topping (see note 2)
  • salt freshly ground
  • black pepper freshly ground
  • 4 Hamburger Bun split, for serving
  • toppings such as ketchup, mustard, mayonnaise, pickles, for serving

Instructions

  1. In a large skillet, combine beef, water, mustard, and sugar. Simmer over medium heat until the beef is cooked through, about 5 minutes, breaking up clumps of meat with a spoon.
  2. Drain the fat if desired (I don't, and it is closer to the original recipe if you don't, but you can if you want). Stir in onion and season to taste with salt and pepper (I like 1 teaspoon salt and 1/2 teaspoon pepper).
  3. Serve meat on buns with toppings on the side such as ketchup, mustard, mayonnaise, and pickles.

Notes

  • Use 85% lean ground beef for optimal flavor and texture.
  • Onions can be added raw for a sharper bite or browned beforehand for milder flavor.
  • Soft hamburger buns are recommended; toasting or buttering improves texture.
  • Leftover meat mixture stores in the refrigerator for up to 4 days and can be reheated on the stove or microwave.
  • Make meat portion ahead and freeze in portions for future use; thaw in refrigerator before reheating.
  • Optional slow cooker method involves combining browned beef and seasonings and cooking on low for 2 to 3 hours.
  • Try adding Worcestershire or soy sauce for extra flavor.
  • Serve with traditional sandwich toppings like ketchup, mustard, pickles, and raw onion slices.
