Low Carb Bacon Wrapped Meatloaf
Description
The recipe starts by mixing ground beef with chopped green bell pepper, onion, and garlic alongside eggs to bind. Almond flour replaces traditional breadcrumbs to maintain a low-carbohydrate profile. Mozzarella or cheddar and powdered Parmesan cheeses add umami and richness. Worcestershire sauce, salt, and black pepper season the mix evenly.
The loaf is formed in a baking dish, then wrapped in halved bacon slices covering the exterior. A glaze made from reduced sugar ketchup combined with Italian salad dressing is spread atop the bacon, imparting a tangy-sweet layer. Baking is done first at 375°F, then finished at a higher temperature to crisp the bacon and ensure the internal meat temperature reaches 160°F for safe consumption.
Resulting meatloaf combines tender, moist ground beef infused with vegetables and cheese, encased in crispy, flavorful bacon. The glaze caramelizes over the bacon adding contrast to the savory profile. Allowing it to rest before slicing helps retain juices and makes serving cleaner.
