Low Carb Buffalo Chicken Meatballs
Description
This recipe mixes lean ground chicken with almond flour, egg, shredded cheddar cheese, hot sauce, and dry ranch seasoning. The mixture is formed into meatballs and baked at a high temperature until reaching a safe internal temperature, yielding tender but firm meatballs that hold shape despite their moist consistency.
The combination of hot sauce and ranch seasoning provides the characteristic buffalo flavor complemented by cheddar. These meatballs suit a low-carb diet by substituting typical breadcrumbs with almond flour and can be enjoyed as a snack or served with dipping sauces.
Adjustments can be made by adding more almond flour or Parmesan cheese if the mixture feels too wet. Ground turkey can be used interchangeably with similar results. Different hot sauces affect the spice intensity, and blue cheese dressing can replace ranch for serving.
Ingredients
- 1 pound ground chicken lean
- 1 large egg
- 1/2 cup almond flour
- 1/4 cup hot sauce plus more for serving
- 1/4 cup cheddar cheese shredded
- 2 tablespoons ranch dressing plus more for serving, prepared
- 1 tablespoon ranch seasoning dry
Instructions
- Preheat oven to 500 degrees. Spritz a baking sheet with nonstick spray.
- Add all of the ingredients to a medium bowl and mix well with your hands.
- Form mixture into 9 evenly sized meatballs and place on the prepared baking sheet.
- Bake for 15 minutes or until the internal temperature reaches 165 degrees.
- Serve with extra hot sauce and ranch dressing, as desired.
Notes
- If the mixture is too wet to shape, add almond flour or grated Parmesan cheese one tablespoon at a time until manageable.
- Ground turkey may be substituted for ground chicken with no significant change in flavor.
- Use Frank's Red Hot Sauce for a traditional buffalo flavor, or Frank's Buffalo Sauce for a milder heat.
- Blue cheese dressing is a suitable alternative to ranch dressing for serving.
