Creamy, delicious nutrient-dense carrot cake smoothie that is loaded with feel-good ingredients and is low in sugar!

Ingredients

Servings

Carrot Cake Smoothie:

  • 1 cup cauliflower steamed then frozen
  • 1 carrot chopped (½ cup, small
  • ½ tsp ground cinnamon
  • 1 tsp ginger peeled and minced, fresh
  • nutmeg tiny pinch
  • 1 1/2 cups coconut milk light, canned
  • 1 1/2 Tbsp all-purpose sweetener Truvia® Sweet Complete™ brand
  • 2 collagen powder optional, or vanilla protein powder, quantity unspecified

For Garnish:

  • 1 Tbsp walnuts chopped
  • 1 Tbsp coconut unsweetened, shredded
  • Coconut whipped cream

Instructions

  1. Add all of the ingredients to a high-powered blender and blend until it is completely smooth. This may take a couple of rounds if you’re using a smoothie setting on your blender, as small chunks of carrot may still be present after one round.
  2. Taste the smoothie and add more sweetener, cinnamon, and/or ginger if desired and re-blend to incorporate.
