Low-Carb Creamed Spinach

This creamed spinach is a low carb and gluten free version of the Lawry's steakhouse version.

Ingredients

  • 1 pound spinach defrosted and drained, frozen
  • 4 lices Bacon diced
  • 1 medium onion diced fine
  • 2 cloves garlic minced
  • 3/4 teaspoon seasoned salt Lawry's brand
  • 1/2 teaspoon white pepper
  • 1/4 teaspoon nutmeg
  • 3 Tablespoon butter
  • 3/4 cup cream

Instructions

  1. Squeeze liquid out of spinach.
  2. In a saucepan over a medium heat saute bacon 2 to 3 minutes. Add diced onion, and continue cooking until onion is translucent, about 3 minutes.
  3. Add butter and minced garlic and cook just until fragrant, and butter is melted.
  4. Add cream, spinach and spices and bring to a gentle boil. Reduce heat and cook about 5 minutes, until spinach is cooked and heated through.
  5. In batches, puree the spinach mixture until smooth and creamy. There will be bits of bacon and onion. Adjust seasoning to taste.

Notes

  • This creamed spinach is great to make ahead. It actually tastes better the next day!
