Low Carb Fried Pickles

Ingredients

  • 16 oz dill pickles sliced into chips, container
  • 2 egg
  • 1/2 cup coconut flour
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1 1/2 cup ground pork rinds or pork panko

Instructions

Air Fryer Instructions

  1. Prepare a breading station by combining coconut flour with salt, pepper, and garlic powder, whisk eggs together in a shallow bowl, and place ground pork rinds in a separate shallow bowl
  2. Drain the liquid from the pickles
  3. Bread each pickle individually by tossing the pickle in the coconut flour mixture, then the egg and finally the ground pork rinds
  4. Preheat the air fryer at 400F for 5 minutes prior to cooking the pickles
  5. Arrange the breaded pickles in the air fryer basket so there is a bit of space between each one
  6. Air fry for 5-6 minutes and remove from the air fryer
  7. You may need to cook them in batches until all are fried!

  1. Preheat the oven to 425F and line a baking sheet with parchment and place a wire baking rack on the baking sheet

  3. Drain the liquid from the pickles
  4. Bread each pickle individually by tossing the pickle in the coconut flour mixture, then the egg and finally the ground pork rinds
  5. Arrange the breaded pickles on the wire baking rack so there is a bit of space between each one
  6. Bake for 10 minutes or until the pickles reach their desire crisp
