Low-Carb Lasagna Stuffed Peppers (quick & easy)

Low-Carb Lasagna Stuffed Peppers are bell peppers filled with a sautéed mixture of ground turkey, onions, pasta sauce, and cheeses including cottage, parmesan, and mozzarella. The peppers are baked until the cheese is bubbly and golden, offering a lower-carb alternative to traditional lasagna with a flavorful, savory filling and a melty cheese topping.

Description

This recipe involves preparing a savory filling using ground turkey browned with diced onion, simmered briefly in pasta sauce, then combined with parmesan and cottage cheese for creaminess and flavor depth. The hollowed bell peppers are filled with this mixture, and mozzarella cheese tops the stuffed peppers before baking.

Baking at a moderate temperature allows the cheese to melt and brown while the peppers soften but maintain their shape. The dish brings the layered flavors of lasagna into a stuffed pepper format that is quick to prepare.

These stuffed peppers can be served as a main dish on their own or accompanied by a light salad or vegetable side. The inclusion of cottage cheese and parmesan adds a creamy texture to the meaty filling, and the mozzarella topping forms a golden, bubbly finish.
