Low Fat Irish Soda Bread
Description
This recipe blends all-purpose and whole wheat flours with baking soda, salt, and sugar. Buttermilk is added gradually to form a soft dough, to which raisins are incorporated for flavor. After a light knead, the dough rests covered to allow the flours to hydrate and the leavening to develop.
The dough is shaped into a round loaf, scored with a deep X, and baked until golden and cooked through, as verified by a clean toothpick test. The combination of flours and buttermilk provides a moist yet firm crumb with a slightly sweet note thanks to the raisins and sugar.
The bread is best cooled briefly before serving and offers a traditional Irish soda bread flavor with less fat than some versions. It can accompany soups or cheeses or be eaten plain.
Ingredients
- 1 1/2 cups all-purpose flour
- 1 1/2 cups whole wheat flour
- 1 1/2 tsp baking soda
- 1 tsp salt
- 4 tbsp sugar
- 1 1/2 cups buttermilk 1% fat
- 3 oz raisin 2/3 cup
Instructions
- Preheat oven to 375F°.
- Mix all dry ingredients (first 5) in a large bowl with a whisk.
- Slowly add buttermilk stirring with a wooden spoon until a soft dough is formed.
- Add raisins, knead the dough lightly on a floured surface for about 1 minute.
- Form into a round, slightly flattened shape. Place in a large bowl and cover, let it rest 30 minutes.
- Place on a baking sheet with a silicone baking mat or parchment paper.
- Using a sharp knife, make an X at the top about 1/2 inch deep. Bake about 40 minutes, until golden.
- To test if it's done, insert a toothpick into the bread, if it comes out clean it is done.
- Let it cool on a bakers rack for about 5-10 minutes before serving.
