Luby’s Macaroni and Cheese

Luby's Macaroni and Cheese features elbow macaroni enveloped in a creamy American cheese sauce made from dry milk, flour, and melted butter. Baked until bubbling and topped with additional cheese, this casserole has a smooth, rich texture and a mild cheesy flavor. The simple ingredient list recreates the classic comfort dish, ideal for serving as a warm side or main.

Description

This recipe replicates the classic Luby's Macaroni and Cheese by cooking elbow macaroni and mixing it with a cheese sauce made from dry milk, melted butter, flour, boiling water, salt, and shredded American cheese. The dry milk and flour form a base for the sauce when combined with melted butter and hot water, creating a creamy consistency. Adding shredded cheese in stages produces a smooth, velvety texture. The mixture is transferred to a baking dish, covered tightly with foil, then baked to meld flavors. Uncovering for a short time allows the remaining cheese sprinkled on top to melt and slightly brown.

The finished casserole has a creamy, cheesy quality with tender pasta throughout. It makes a hearty accompaniment to a variety of meals or can be enjoyed as a satisfying vegetarian main dish.
