Luther's Smoky BBQ Sauce

Luther's Smoky BBQ Sauce combines tomato sauce with brown sugar, molasses, and spices including black pepper, mustard powder, garlic powder, and cayenne, simmered with onion and finished with liquid smoke. This sauce offers a balanced sweetness, smoky depth, and mild heat, ideal for glazing grilled meats or as a condiment.

Description

This BBQ sauce starts by mixing tomato sauce with minced onion, brown sugar, black pepper, mustard powder, salt, molasses, corn syrup, cayenne pepper, garlic powder, and a measured amount of liquid smoke. Simmering the mixture for one hour allows the flavors to meld and the raw onion to soften, mellowing the sauce. The liquid smoke amount can be adjusted for preferred smokiness.

The resulting BBQ sauce is rich and sweet with a pronounced smoky undertone and a subtle spicy kick. The long simmer deepens flavors and thickens the sauce, making it suitable for basting or dipping. For a smoother consistency, blending to eliminate the onion pieces is an optional finishing step.

Cool the sauce completely before refrigerating to preserve flavor, and adjust seasoning or smoke as desired before use. The sauce is versatile for barbecues or as an addition to sandwiches and burgers.

Ingredients

Servings
  • 18 ounces tomato sauce
  • 1/4 cup onion minced
  • 1/2 cup brown sugar
  • 1 teaspoon black pepper
  • 1/2 teaspoon mustard powder
  • 1 teaspoon salt
  • 1 tablespoon molasses
  • 1 tablespoon corn syrup
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon garlic powder
  • 2-3 teaspoons liquid smoke

Instructions

  1. Mix all ingredients in a medium sized pot, and simmer for 1 hour.

Notes

  • Simmer the sauce for a full hour to allow onion and spices to fully develop and blend.
  • Adjust liquid smoke starting at 2 teaspoons to fit your taste; add more cautiously since it cannot be removed.
  • For a smoother sauce, use an immersion blender to puree after cooking if you prefer no onion pieces.
  • Let the sauce cool completely before refrigerating to best preserve flavors.
