Ingredients

  • 4 cups elbow macaroni dry
  • ½ cup celery diced
  • ½ cup red onion diced
  • 8 lices Bacon fried and chopped
  • ½ medium carrot shredded
  • 1 tablespoon green onion thinly sliced, for garnish

Dressing

  • cups mayonnaise
  • 1 teaspoon mustard powder dry
  • 1 tablespoon sugar
  • 2 tablespoon cider vinegar
  • cup sour cream
  • 1 teaspoon salt or to taste
  • 1 teaspoon black pepper or to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and rinse well with cold water.
  2. In a small bowl, whisk together the mayonnaise, mustard, sugar, vinegar, sour cream, salt and pepper.
  3. Add the macaroni, celery, red onion, bacon, carrot, half the green onion, and the prepared dressing to a large bowl. Toss well to combine.
  4. Garnish with remaining green onion and serve cold.

Notes

  • This salad can be stored in an airtight container in the refrigerator for 3 to 5 days for best taste and freshness.
  • It benefits from chilling to allow flavors to meld and develop further.
