Magic Mushroom Sauce Recipe

This Magic Mushroom Sauce blends sautéed crimini mushrooms, soaked cashews, garlic, and seasoning into a creamy, smooth sauce. The sauce is made by cooking the mushrooms until browned, then blending a portion of them with soaked cashews and seasonings, resulting in a rich, creamy texture that complements various dishes. It serves as a versatile sauce that can enhance pasta, vegetables, or proteins with its earthy mushroom flavor balanced by the cashews’ creaminess.

Description

The Magic Mushroom Sauce Recipe combines crimini mushrooms, garlic, and soaked cashews to create a creamy, savory sauce. The mushrooms are first sautéed in olive oil until browned for about 15 minutes, which develops their deep, earthy flavors. A portion of these cooked mushrooms is then blended with soaked cashews, garlic, salt, pepper, and water until smooth, yielding a velvety texture. Returning this sauce to the pan with the remaining mushrooms and heating briefly brings the flavors together.

This mushroom sauce has a rich, creamy texture from blended cashews and a robust mushroom flavor from the sautéed crimini. It works well as a sauce over pasta, roasted vegetables, or grilled meats, adding moisture and depth to meals.

The notes suggest soaking cashews from 4 to 24 hours to soften them for blending, though a high-powered blender can reduce soaking time. Proper soaking is key to achieving a smooth, creamy sauce without graininess. Adjust the consistency by varying the added water.

Ingredients

Servings
  • 1 cup cashews soaked
  • 1 tablespoon olive oil
  • 1 ½ lb crimini mushroom sliced, or button mushroom
  • 1 large garlic minced, clove
  • 1 teaspoon salt sea salt
  • ¼ teaspoon black pepper

Instructions

  1. Add the olive oil to a large frying pan over medium-high heat. Add the mushrooms and cook, stirring occasionally, until they are brown, about 15 minutes.
  2. Add the soaked cashews, garlic, sea salt, pepper, 1 ½ cups of water and a scoop of the cooked mushrooms to a food processor or blender and blend on high until smooth.
  3. Pour the sauce into the pan with the rest of the mushrooms. Bring the sauce to a boil then remove it from the heat.

Notes

  • Soak cashews at least 4 hours to soften, or less if using a high-powered blender for smoother blending.
  • Use olive oil and salt to balance flavors and aid in sautéing the mushrooms evenly.
  • Add water gradually to adjust sauce thickness to preference.
