Magic Mushroom Sauce Recipe
Description
The Magic Mushroom Sauce Recipe combines crimini mushrooms, garlic, and soaked cashews to create a creamy, savory sauce. The mushrooms are first sautéed in olive oil until browned for about 15 minutes, which develops their deep, earthy flavors. A portion of these cooked mushrooms is then blended with soaked cashews, garlic, salt, pepper, and water until smooth, yielding a velvety texture. Returning this sauce to the pan with the remaining mushrooms and heating briefly brings the flavors together.
This mushroom sauce has a rich, creamy texture from blended cashews and a robust mushroom flavor from the sautéed crimini. It works well as a sauce over pasta, roasted vegetables, or grilled meats, adding moisture and depth to meals.
The notes suggest soaking cashews from 4 to 24 hours to soften them for blending, though a high-powered blender can reduce soaking time. Proper soaking is key to achieving a smooth, creamy sauce without graininess. Adjust the consistency by varying the added water.
Ingredients
- 1 cup cashews soaked
- 1 tablespoon olive oil
- 1 ½ lb crimini mushroom sliced, or button mushroom
- 1 large garlic minced, clove
- 1 teaspoon salt sea salt
- ¼ teaspoon black pepper
Instructions
- Add the olive oil to a large frying pan over medium-high heat. Add the mushrooms and cook, stirring occasionally, until they are brown, about 15 minutes.
- Add the soaked cashews, garlic, sea salt, pepper, 1 ½ cups of water and a scoop of the cooked mushrooms to a food processor or blender and blend on high until smooth.
- Pour the sauce into the pan with the rest of the mushrooms. Bring the sauce to a boil then remove it from the heat.
Notes
- Soak cashews at least 4 hours to soften, or less if using a high-powered blender for smoother blending.
- Use olive oil and salt to balance flavors and aid in sautéing the mushrooms evenly.
- Add water gradually to adjust sauce thickness to preference.
