Magical Green Sauce
Description
This sauce begins by simmering fresh jalapenos, yellow onion, and garlic until the peppers are tender but not mushy. After cooling, the ingredients are blended with kosher salt and red wine vinegar to build a tangy base. Slowly incorporating grapeseed oil while blending creates a light, creamy consistency. The cooking liquid is reserved and added as needed for smoothness.
The sauce presents a fresh, slightly spicy heat from the jalapenos balanced by the acidity of red wine vinegar and the mellow flavor of the onion and garlic. The emulsification with oil gives it a creamy texture without heaviness. It can complement grilled meats, vegetables, or be used as a dipping sauce.
The sauce keeps well refrigerated for up to a week, making it practical for making ahead. Its vibrant green color and balanced heat make it a versatile addition for adding brightness and spice.
