Mahogany Chicken Wings

Mahogany Chicken Wings feature a marinade and glaze combining soy sauce, dry sherry, hoisin, plum sauce, garlic, ginger, rice wine vinegar, and honey. The chicken wings and drumettes soak up a flavorful blend that caramelizes during a slow oven bake, resulting in a richly glazed exterior with tender meat inside. The sauce is thickened separately and used for basting and serving alongside the wings, topped with scallions for added freshness and texture.

Description

Mahogany Chicken Wings are prepared by marinating chicken wings and drumettes in a robust mixture of soy sauce, dry sherry, hoisin, plum sauce, minced garlic, freshly grated ginger, rice wine vinegar, and honey. The wings absorb these flavors over several hours in the refrigerator before baking at 375°F. The baking process combined with frequent basting of a separately reduced glaze ensures a sticky, flavorful coating while cooking the chicken through and allowing the glaze to thicken and intensify in flavor.

The finished chicken has a balance of savory, sweet, and acidic notes from the plum sauce, honey, and vinegar with aromatic hints from garlic and ginger. The oven roasting provides caramelization and a slightly sticky texture on the skin. Scallions sprinkled on top introduce a mild onion freshness and crispness that complements the rich glaze.

Serve these wings hot as a snack or appetizer, pairing well with rice or simple side vegetables. The recipe recommends using parchment or foil on the baking pan to prevent sticking due to the thick glaze. Adjusting the marinade's flavor balance before marinating ensures the glaze matches your preferred sweetness or saltiness.

Take note that the wings may cook slightly faster than the hour indicated, so monitor for doneness to keep the meat juicy. The marinade can be made with different soy sauce varieties for dietary preferences. Larger chicken pieces like thighs or legs could also be adapted to this glaze for a more substantial portion.

Ingredients

Servings
  • 1 lb chicken wings
  • 1 lb chicken drumettes

marinade/glaze

  • 1/2 cup soy sauce Kikkoman
  • 1/4 cup dry sherry
  • 1/3 cup hoisin sauce heaping amount
  • 1/4 cup plum sauce
  • 3 cloves garlic minced
  • ginger grated, fresh, thumb sized piece
  • 1/4 cup rice wine vinegar
  • 2 Tbsp honey

garnish

  • 1 bunch scallions thinly sliced

Instructions

  1. Set oven to 375F
  2. Whisk the sauce ingredients together. Take a taste to see if you'd like to alter any of the proportions.
  3. Put the wings and drumettes in a large dish, bowl, or zip lock baggie and cover them with the sauce. Make sure all the chicken is covered with the sauce, and then put in the refrigerator to marinate for anywhere from 6 to 48 hours.
  4. Line a baking pan with parchment or foil. Shake the excess sauce off the chicken and arrange in a single layer on the pan. Put in the oven and set timer for one hour.
  5. While the chicken is cooking put the sauce in a pan on the stove and bring it to a boil. Boil for about 20 minutes, until reduced and thick.
  6. Baste the chicken with the sauce every 10-15 minutes. You don't have to wait until the sauce has thickened to do the basting. (The chicken may be done in under an hour)
  7. Serve the chicken garnished with the scallions, along with the thickened glaze on the side.

Notes

  • Use parchment or foil to line your baking pan to prevent the sticky glaze from adhering to the pan.
  • Marinate the wings for at least 6 hours and up to 48 hours to achieve deeper flavor penetration.
  • Monitor baking time closely; the wings might finish cooking before one hour, so check for tenderness and caramelization.
  • Consider using different types of soy sauce such as low sodium or gluten free to suit dietary needs.
  • This glaze also works well on larger chicken pieces like thighs or legs for a more substantial meal.
  • Plan for at least half a pound of chicken per person, as the wings are quite popular and tend to disappear quickly.
