Make Ahead Breakfast Pie with Lattice Bacon Crust
Description
Make Ahead Breakfast Pie with Lattice Bacon Crust features a pie dough base filled with a mixture of eggs, milk, fresh parsley, shredded potatoes, and grated Monterey Jack cheese. The standout element is the bacon lattice crust woven on top, which partially submerges into the filling while baking, allowing the bacon to become tender with crispy edges. The pie is baked at 375°F for about an hour until set, resulting in a hearty and textured breakfast dish.
The pie offers a balance of creamy, cheesy filling with the saltiness and crunch of bacon on top. It can be sliced and served warm, making it suitable for feeding a group during a special breakfast or brunch occasion.
This recipe is also convenient as it can be assembled and refrigerated for up to two days before baking. This allows for easy morning preparation. Using thick-cut hickory-smoked bacon adds a pronounced smoked flavor that complements the mild cheese and potatoes.
Ingredients
- 1 pie dough homemade or store bought, prepared
- 4 egg
- 2 cups milk
- 2 tablespoons parsley minced, fresh
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 8 oz. Monterey jack cheese grated, or cheddar cheese
- 16 oz. shredded potatoes thawed, frozen
- 10 lices Bacon like Wright® Brand Naturally Hickory Smoked Bacon, thick cut
Instructions
- Preheat oven to 375 degrees F.
- Press prepared pie dough into pie pan.
- In a large bowl, beat the four eggs.
- Whisk in the milk (2 cups), parsley (2 tablespoons), kosher salt (1 teaspoon), and pepper (1/2 teaspoon).
- Stir in the thawed potatoes (16 oz.) and grated cheese (8 oz.).
- Pour the mixture into the prepared pie crust.
- Create a lattice bacon crust on top by weaving 5 pieces of bacon in one direction and 5 in the other. You can do this on a surface and transfer it carefully on top of the pie, or weave it directly on top of the pie. It will submerge into the mixture a little bit- this is fine. Make sure the ends of the bacon are on the rim of the pie crust, and bend the edges in on the corners to round out the lattice (see photo)
- At this point, you can place in your refrigerator for up to two days until you are ready to cook.
- When you are ready to cook, place the pie on top of a rimmed baking sheet and bake at 375 degrees for 60-70 minutes, or until center of pie is set.
Notes
- The pie can be made up to two days ahead; keep it refrigerated until baking.
- Make sure the bacon lattice edges are tucked into the pie crust rim to secure it during baking.
- Use thick-cut bacon for best texture and flavor contrast.
- Adjust seasoning as the bacon and cheese already add saltiness to the filling.
