Description
Make Ahead Homemade Sausage patties combine ground pork and turkey with a puree or finely chopped onion, parsley, and a blend of dried herbs and spices including sage, thyme, chili powder, black pepper, basil, oregano, sea salt, and optional red pepper flakes and maple syrup. Mixing the seasonings well before incorporating the meats helps distribute flavor evenly. The mixture can be formed into patties by hand or using a rolling pin and cutter for uniform size. Cooking is done on medium-high heat in a lightly oiled skillet until browned with no pink inside. For convenience, the sausage mixture or formed patties can be frozen: shaped into logs for later slicing or individually frozen on baking sheets before storing in freezer bags. This flexibility allows for easy meal prep and portion control.
Ingredients
- 2 lbs ground pork at room temperature
- 1.25 lbs ground turkey at room temperature
- 1/3 cup onion puree or chop first in blender or food processor, pureed or finely chopped
- 2 tsp parsley or dried if you don't have fresh, finely minced, fresh
- 2 tsp sea salt fine celtic
- 1 tsp sage ground
- 1/2 tsp thyme dried
- 1 tsp chili powder
- 1 tsp black pepper
- 1 tsp basil dried
- 1 tsp oregano dried
- 2 tsp pure maple syrup optional
- 1/2 tsp red pepper flakes optional
Instructions
- Combine all the seasonings and mix until well blended. Add in ground meat, syrup and onion, using your hands to combine thoroughly. If cooking right away, shape into patties and cook over med-high heat on heavy skillet or griddle sprayed lightly with oil. Cook until nice and brown and no longer pink in the middle, a few minutes on each side.
- To shape patties you can either use your hands or do what I did. Take some meat and place between two layers of plastic wrap. With a rolling pin roll out meat to desired thickness. Remove top layer of plastic wrap. Take a round cookie cutter or top of a drinking glass, and press down to cut out nice round sausage patties. Transfer to hot griddle or baking sheet to be frozen.
Notes
- Shape and roll the sausage mixture into two six-inch logs, wrap tightly in plastic wrap, and freeze for later slicing into patties.
- Alternatively, form patties individually and freeze them on a parchment-lined baking sheet before transferring to a freezer-safe bag.
- Thaw frozen patties before cooking, or cook directly if partially thawed.
