Make Ahead Mashed Potatoes

Make Ahead Mashed Potatoes combine red potatoes, cream cheese, sour cream, and seasoning into a creamy, smooth dish that can be prepared in advance. The potatoes are boiled, mashed with dairy and seasoning, then refrigerated in a baking dish until ready to bake until golden and heated through. This method provides a convenient side dish ready for holiday meals or gatherings.

Description

Make Ahead Mashed Potatoes use red potatoes peeled, diced, and boiled until tender, then mashed together with cream cheese, sour cream, butter, onion salt, and optional milk for desired consistency. The potatoes are seasoned with salt and pepper to taste and whipped until fluffy. After mixing, they are smoothed evenly in a baking dish, covered, and refrigerated for up to two days before baking.

When ready to serve, the potatoes are brought to room temperature and baked at 350 degrees Fahrenheit until warmed through and starting to develop a slight golden surface. This reheating step refreshes the texture and flavor, making it ideal for preparing ahead of time for occasions that require efficient meal prep.

This dish works well as a traditional side, complementing roasted meats and vegetables. Using red potatoes contributes to a creamy texture with a slightly earthy flavor, while the cream cheese and sour cream add tang and richness. Butter and onion salt enhance the overall savoriness of the mashed potatoes.

The recipe notes that these mashed potatoes also freeze well, offering an option for longer storage and convenience.
