Make-Ahead Mashed Potatoes

Make-Ahead Mashed Potatoes use peeled russet potatoes cooked until tender then mashed with cream cheese, sour cream, heavy cream, butter, salt, and pepper for a rich, creamy texture. The mixture is prepared in advance and stored chilled before reheating and browning in the oven. This method yields smooth, flavorful mashed potatoes easily served alongside main dishes.

Description

This recipe starts by boiling peeled and chunked russet potatoes until tender, then draining and mashing them for a smooth base. Cream cheese, sour cream, heavy cream, and unsalted butter are combined in a saucepan and stirred until smooth. This creamy mixture is then blended into the potatoes along with kosher salt and coarsely ground black pepper, enhancing flavor and richness.

The mashed potato mixture is transferred into a baking dish to cool before being covered and refrigerated for up to two days, enabling it to be made ahead. When ready to serve, the dish is baked at 350°F until heated through and optionally lightly browned on top for texture contrast.

This approach provides a convenient way to prepare creamy mashed potatoes with a balanced tang from the sour cream and cream cheese alongside the richness of butter and heavy cream. The method also allows flexibility for preparing in advance while maintaining a smooth, rich texture after reheating.
