Description

These chicken burgers start with butterflied chicken breasts marinated for at least two hours in a mixture of soy sauce, sea salt, mala spice mix, and sesame oil. The marinade flavors the meat deeply and tenderizes it with salty and spicy notes typical of mala seasoning. The chicken is coated thoroughly in a blend of all-purpose flour and corn starch which helps form a crispy crust when fried.

Fried in hot oil until the chicken reaches a safe internal temperature and features a golden crust, the meat remains juicy inside. After frying, additional mala spice is sprinkled on the chicken to intensify the flavor. The burgers are built on hamburger buns spread with sesame-flavored kewpie mayonnaise, layered with crisp lettuce, and drizzled with Sichuan chili oil, adding a numbing chili heat that complements the mala seasoning. Servings

For the chicken:

  • 2 chicken breast butterflied
  • 1 ½ tablespoon soy sauce
  • ½ teaspoon salt sea salt
  • 4 tablespoon mala spice mix divided
  • 1 teaspoon sesame oil
  • 1 C all-purpose flour
  • 2 tablespoon corn starch
  • cooking oil use a high smoke-point oil such as canola, peanut, grapeseed, for frying

For assembling:

  • 4 Hamburger Bun
  • 4 tablespoon Kewpie mayonnaise or mayo, sesame flavored kewpie mayonnaise
  • 4 leaves lettuce
  • sichuan chili oil

Instructions

Prepare the chicken:

  1. Place the chicken in a large bowl.
  2. Add in the soy sauce, salt, Mala spice mix, and sesame oil.
  3. Marinate the chicken in the seasoning.
  4. Cover and store in the fridge for 2 hours or longer.
  5. Heat a pot of oil over medium-high heat. (Use a high smoke-point oil, such as peanut, grapeseed or canola).
  6. Add flour and corn starch to a shallow bowl and mix.
  7. Take the chicken out of the marinade, and coat with flour mixture.
  8. Coat chicken completely and then tap off excess.
  9. Add the chicken to the hot oil and fry one at a time, about 5 minutes per side, or until the internal temperature reaches 165°F/74°C.
  10. Remove chicken from the frying oil and drain on paper towel.
  11. Season the fried chicken with additional mala spice mix.

Assemble:

  1. Slice a hamburger bun and spread 1 tablespoon of sesame kewpie sauce.
  2. Add lettuce and the fried chicken to the bun.
  3. Drizzle Sichuan chili oil over the fried chicken.
  4. Replace the top half of the bun and enjoy!
