Mala Spice Chicken Burgers
Description
These chicken burgers start with butterflied chicken breasts marinated for at least two hours in a mixture of soy sauce, sea salt, mala spice mix, and sesame oil. The marinade flavors the meat deeply and tenderizes it with salty and spicy notes typical of mala seasoning. The chicken is coated thoroughly in a blend of all-purpose flour and corn starch which helps form a crispy crust when fried.
Fried in hot oil until the chicken reaches a safe internal temperature and features a golden crust, the meat remains juicy inside. After frying, additional mala spice is sprinkled on the chicken to intensify the flavor. The burgers are built on hamburger buns spread with sesame-flavored kewpie mayonnaise, layered with crisp lettuce, and drizzled with Sichuan chili oil, adding a numbing chili heat that complements the mala seasoning. This combination offers texture contrast and layered spicy flavors in a handheld sandwich format.
