This Lebanese cabbage salad, called Malfouf Salad, combines finely shredded white cabbage with fresh cherry tomatoes, thinly sliced radishes, green onions, and chopped parsley. The dressing is made by shaking together lemon juice, olive oil, garlic, dried mint, and optional Middle Eastern spices zaatar and sumac, which add a tart and slightly savory dimension.

Ingredients
For the salad:
- 1/2 head cabbage anywhere between 1.5-2 lbs total, white
- 1 pack cherry tomato 8 oz, 250 g, sliced in half
- 2 green onion stalks, thinly sliced (white and green parts)
- 3-4 radish thinly sliced
- handful parsley fresh, finely chopped
For the dressing:
- juice of lemons, squeezed about 1/4 cup
- 1/3 cup olive oil
- 2 teaspoon dried mint
- 1 teaspoon zaatar optional
- 1 teaspoon sumac optional
- 2 garlic cloves, crushed
- 1/2 teaspoon salt
- pinch black pepper
Instructions
For the dressing:
- Combine all the ingredients for the dressing in a jar, and shake well to combine. Taste and adjust seasoning as desired.
For the salad:
- Mix together the cabbage, cherry tomatoes, green onions, parsley and radishes. Pour dressing on top and toss to evenly coat the salad with dressing.
- Enjoy immediately, or store in the fridge. This'll still taste good for a few days!
Notes
- Sumac adds a sharp and tangy flavor but can be omitted if unavailable.
- Zaatar is optional and provides additional Middle Eastern flavor but is not essential.
- Shred cabbage ahead of time using a food processor or buy pre-shredded to save prep time.
- Pairs well with Lebanese kafta kabobs, mixed grills, mujaddara safra, or bulgur pilaf.
- Leftovers keep tightly covered in the fridge for 3-5 days; the salad may soften but remains tasty.
- Dressing can be made up to 5 days in advance; veggies can be chopped a day ahead and combined before serving.
