Mamba (Spicy Haitian Peanut Butter)

Mamba is the Haitian spicy version of peanut butter that is distinguished by the presence of chili pepper, usually Scotch Bonnet.

Ingredients

  • 1 lb peanuts shelled, raw
  • 1 scotch bonnet pepper , seeded and chopped
  • 1 tablespoon cane sugar
  • 1 tablespoon peanut oil
  • 1 teaspoon salt

Equipment

  • baking sheet
  • Colander
  • food processor
  • glass jar

Instructions

  1. Preheat the oven to 350 F (175°C) for 15 minutes.
  2. Add the peanuts onto a baking sheet lined with parchment paper or a silicone baking mat.
  3. Roast the peanuts for 20 to 25 minutes, stirring them regularly with a wooden spoon, checking frequently towards the end to make sure they do not burn.
  4. Add the peanuts into a colander with large holes and, using both gloved hands, stir the still hot peanuts, rubbing them constantly to remove their skin.
  5. The skins should gradually fall out through the holes.
  6. In a food processor, mix the peanuts, salt and sugar for 5 minutes.
  7. Add the chili and blend again for 5 minutes.
  8. Add the oil and mix again for 3 minutes or until obtaining a smooth paste.
  9. Transfer the paste to a sterilized glass jar and tightly close the jar.
  10. Mamba can be stored in the refrigerator for 1 month.
