Ingredients

Ingredients for Mandarin Apple Salad:

  • 1 romaine lettuce large head
  • 1-2 apple add to a small bowl with juice of 1/2 lemon + 1/2 cup water to keep from browning, medium
  • 3-4 mandarins seedless
  • 1/2 red onion finely chopped, small
  • 1/2 cup walnuts optional
  • 1/4 cup craisins dried cranberries
  • 1/4 cup feta cheese optional, crumbled
  • balsamic vinaigrette sweet

Ingredients for the Sweet Balsamic Vinaigrette:

  • 1/2 cup sugar
  • 3/4 cup extra-virgin olive oil
  • 1 tsp salt
  • 1/4 cup balsamic vinegar

Instructions

  1. Wash, chop and spin dry your romaine lettuce. Than transfer your greens to the salad bowl.
  2. Peel and separate mandarins. Toss into the salad bowl.
  3. Chop apples into 1/2" pieces. If you aren't eating your salad right away, add apples to a small bowl filled with juice of 1/2 lemon + 1/2 cup water to keep from browning. Just drain and toss in when ready to serve!
  4. Top salad with chopped onion, walnuts and craisins. Add dressing to taste and then sprinkle with feta if you wish. Voila!
