Description

Mango and strawberry overnight oats start by soaking rolled oats in milk overnight in the refrigerator. This softens the oats, creating a creamy base. Shortly before eating, mango pureed or chopped and diced strawberries are stirred in along with yogurt if desired. The mixture is topped with additional mango puree for presentation.

The dish has a smooth, tender texture with the natural sweetness and acidity from the fresh fruits complementing the mild oats and dairy base. This no-cook method allows flavors to meld while offering a fresh fruit contrast.

  • ½ cup old fashioned oats 50g, rolled oats
  • ½ cup milk 240ml, a little under is fine; use dairy-free alternative as suits
  • ½ Mango small
  • 3 strawberries approx
  • 1 tablespoon yogurt optional, or a little more to taste

Instructions

  1. The night before, put the oats in a bowl and pour over the milk. Cover and leave to soak, refrigerated, overnight.
  2. Shortly before eating, blend the mango to a puree (or just chop small) and chop the strawberries into small chunks. You can blend the mango ahead of time and refrigerate, but I'd suggest best to only mix in shortly before eating.
  3. Stir the yogurt, strawberries and all but around 1 tablespoon of the mango puree through the soaked oats. Top with the remaining mango puree and serve.

Notes

  • Prepare the oats the night before to allow proper soaking and softening.
  • Blend the mango shortly before serving for freshness, or prep ahead and refrigerate the puree.
  • Yogurt is optional; add to adjust creaminess and tang to taste.
