Mango, avocado and arugula salad
Description
The salad features arugula leaves tossed with ripe mango slices, soft avocado, and red onion slices that are briefly soaked in warm salted water and lime juice to soften their bite. The dressing is made by shaking together champagne vinegar (or alternatives like cider vinegar or lemon juice), fresh orange juice, lime juice, olive oil, ground cumin, finely chopped cilantro, sliced red chili, salt, and black pepper.
The combination results in a salad with a balance of sweet, tangy, creamy, and spicy elements. The peppery arugula contrasts with the sweet mango and mellow avocado, while the vinaigrette brings a citrusy and slightly smoky warmth from cumin and chili. The salad is best enjoyed fresh to preserve the texture of the greens and the brightness of the dressing.
