Mango Black Bean Quesadillas

Mango Black Bean Quesadillas combine sweet diced mango with black beans, red pepper, and creamy avocado inside crispy, toasted flour tortillas with melted pepper jack cheese. The fresh green onions, jalapeño, and cilantro add brightness and subtle spice, balanced by lime juice. This fusion results in a vibrant and textured quesadilla with a refreshing contrast to the melted cheese.

Description

This recipe mixes diced mango, rinsed black beans, diced red bell pepper, avocado, green onions, jalapeño, cilantro, and lime juice to create a fresh filling. The ingredients are seasoned with salt and black pepper and gently stirred together. This mixture is divided between two flour tortillas, topped with shredded pepper jack cheese, then covered with additional tortillas.

The assembled quesadillas are cooked in a hot skillet or griddle until the tortillas turn golden brown and the cheese melts inside. The result is a crispy exterior with a warm, melty, and colorful filling offering a balance of sweetness, creaminess, heat, and freshness.

This dish can be served immediately cut into triangles, making it suitable for lunch, light dinner, or a snack. The interplay of sweet mango and spicy jalapeño contrasts well with the savory cheese and beans, providing complex flavors and textures in every bite.
