- 1 15 oz can black beans, thoroughly rinsed
- 1 Mango diced
- 1 jalapeno pepper minced
- 1 zucchini quartered lengthwise & thinly sliced, medium
- ¼ cup cilantro coarsely chopped
- 1 tbsp olive oil
- lime juice from 1
- salt to taste
- black pepper to taste
