Description
This sauce blends six habanero chilis, fresh diced mango, shallot, garlic, white vinegar, lime juice, granulated cane sugar, and sea salt. The ingredients are pureed until smooth, then gently cooked over medium-low heat to achieve a pourable but slightly thickened consistency. The habanero provides significant heat, while the mango and citrus juices moderate the spice with sweetness and acidity. The shallot and garlic add aromatic depth. Simmering helps meld these flavors and reduces excess liquid for better texture.
Once prepared, the sauce is transferred to sterilized jars and refrigerated, where it keeps well for up to three months. The sauce can be used sparingly to add a bright, hot kick to dishes like grilled chicken, seafood, or as a spicy salsa base.
Ingredients
- 6 habanero chilis washed, de-stemmed
- 1 C Mango diced
- 1 medium shallot
- 2 cloves garlic
- ¼ C white vinegar
- 2 tablespoon lime juice
- 1-2 tablespoon granulated cane sugar
- ½ teaspoon salt sea salt
Instructions
- In a blender, add the habanero chili, mango, shallot, garlic, vinegar, lime juice, sugar and sea salt and blend until smooth.
- Pour the puree into a small saucepan and cook over medium-low heat, until slightly thickened (not runny, but pourable consistency).
- Give the sauce a taste (careful, it's hot!), and adjust the seasoning.
- Transfer to a clean, sterile jar and place into the fridge for up to 3 months.
