This mixture is cooked with apple cider vinegar and lime juice until it thickens, intensifying its flavors. The sauce balances the sweet mango and honey with the fiery heat of habanero peppers and the acidity from vinegar and lime.

Ingredients
- 1 medium carrot peeled and chopped
- ¼ cup white onion chopped
- 2 small habanero chile seeded and deveined, orange
- 1 large Mango peeled and diced, ripe
- 1 clove garlic minced
- 1 teaspoon kosher salt
- 1 ½ teaspoons honey
- ¼ cup apple cider vinegar
- 2 tablespoons lime juice fresh
Instructions
- Add carrot, onion, and chiles to a food processor and pulse until chopped.
- Add the mango, garlic, salt, and honey. Process until smooth, about 2 minutes, scraping the sides as needed.
- Add the mango mixture to a small saucepan with vinegar and lime juice.
- Bring to a boil over medium high heat. Reduce the heat to a simmer (medium low) and simmer for 15 to 20 minutes or until thickened. Cool and refrigerate.

- Wear gloves when handling habanero peppers to avoid skin irritation.
