Mango Halibut Ceviche

Mango Halibut Ceviche features cubes of halibut marinated in lime and lemon juice until opaque and "cooked" by the citrus acids, then combined with diced mango, avocado, jalapeño, red onion, cilantro, and seasoned with salt. The ceviche balances fresh seafood with sweet and spicy tropical accents, making it a vibrant cold appetizer or light meal.

Description

This ceviche recipe uses fresh halibut diced into 1-inch pieces and marinated in a mixture of fresh lime and lemon juice. The acidity of the citrus juices causes the halibut to gradually change texture and color, "cooking" the fish without heat. Marination time can range from 30 minutes to 4 hours depending on desired firmness.

After marination, the halibut is combined with diced ripe mango, avocado, seeded jalapeño, thinly sliced red onion, and chopped cilantro. Salt is added to season and bring out the flavors. The mixture is stirred gently to maintain the texture of the ingredients.

The ceviche can be served in individual glasses, on plates, or with tortilla chips, delivering a fresh, tangy, slightly spicy dish ideal for warm weather or as a light starter. The natural sweetness from the mango and creaminess from the avocado contrast the tart marinade and mild heat from jalapeño, creating a balanced flavor profile.

Ingredients

Servings
  • 1 pound halibut diced into 1-inch pieces
  • ½ cup lime juice from about 5-6 limes, fresh
  • 3 tablespoons lemon juice from 1 lemon
  • 1 Mango peeled, seeded, and diced, large
  • 1 avocado peeled, seeded, and diced, large
  • 1 jalapeño seeded, and diced
  • ½ red onion thinly sliced, small
  • ½ bunch cilantro chopped
  • 1 teaspoon salt

Instructions

  1. In a glass (non-reactive) bowl, stir together the halibut, lime juice, and lemon juice. Cover the bowl and marinate in the fridge for 30 minutes to 4 hours. You'll notice the halibut go opaque as the lime juice "cooks" the fish. The longer you marinate the fish, the more it will cook. See above in the blog post for more information.
  2. Remove the halibut from the fridge (no need to drain it) and add the mango, avocado, jalapeno, red onion, cilantro, and salt. Gently stir it to combine.
  3. Serve it up in individual glasses, on a plate, or with tortilla chips.

Notes

  • Use the freshest quality halibut to ensure safety and best flavor in ceviche.
  • Marinate the halibut between 30 minutes and 4 hours to achieve your preferred texture and level of "cooking."
  • Serve chilled and consume promptly for optimal freshness.
