Description
The Mango Jalapeno Ham Glaze is made by simmering diced mangoes with water and sugar until the fruit breaks down and creates a thick sauce. The addition of sliced, deseeded jalapeño introduces a gentle heat that contrasts with the mango's sweetness. Lemon juice adds acidity, rounding out the flavor and adding brightness to the glaze.
This glaze is applied to the ham during the last 10 minutes of its cooking time, allowing the sauce to adhere and caramelize slightly on the surface. The combination of tropical mango and spicy jalapeño complements the salty richness of the ham.
Ingredients
- 2 Mango
- 1/4 c. water
- 2 Tablespoon sugar
- 1 jalapeño
- 1 teaspoon lemon juice
Instructions
- Cut and dice the mangoes. Combine them with the water and sugar in a small saucepan and bring to a boil.
- Reduce heat and simmer until the mangoes lose their shape and the sauce thickens, about 45 minutes. Add more water if it gets too thick.
- Slice and de-seed the jalapeno and add to the mango mixture, along with 1 t. of lemon juice.
- Cook for another 5 minutes.
- Brush or spoon the glaze on the ham during the last 10 minutes of the ham's cooking time.
