Description
Mango Jam combines ripe mango flesh with sugar and lemon juice, cooked until thickened into a sweet, tangy spread. The lemon juice not only adds flavor but also helps the jam set properly. The recipe allows for either a smooth or slightly chunky texture achieved by mashing the mangoes before boiling. The jam's thickness is tested by cooling a spoonful and checking if it gels without flowing back. Once cooked, it is transferred hot into jars, cooled, and refrigerated to preserve freshness.
The natural sweetness of mango pairs well with the subtle acidity of lemon juice, making this jam suitable as a topping on bread or as an addition to various desserts. It offers a fresh fruit flavor distinct from typical berry jams.
Use ripe, diced mangoes for best results and ensure jars are sealed only after the jam has completely cooled. Store refrigerated to maintain quality, and note that the jam’s texture may vary slightly with the ripeness of the mangoes used.
Ingredients
- 2 cups Mango diced, about 2 large
- 1 cup sugar
- 1 tablespoon lemon juice
Instructions
- Hold the mangoes standing and with a knife, cut from the top down on one side of the pit to separate flesh. Repeat on other side. Using a spoon, scoop flesh and coarsely chop. Scrape flesh from pits, if any. Discard pits.
- In a pot, combine mango, sugar, and lemon juice. Mash to a smooth or chunky consistency using an immersion blender or potato masher.
- Bring to a boil until sugar dissolves. Continue to cook at a rolling boil for about 3 to 5 minutes or until the mixture thickens.
- To check for doneness, use the "parting the sea" technique by transferring a teaspoonful onto a small dish and refrigerate for about 1 minute. Run your finger in the middle of jam. If it remains open and does not flow back together, it is ready.
- Transfer mango jam to jars while hot. Allow to cool before sealing completely and store in refrigerator.
