Ingredients

  • 2 Mango see Notes
  • 1 red onion
  • 1 Tablespoon jalapeno pepper see Notes
  • 2 Tablespoon cilantro fresh, aka Coriander
  • lime juice juice of one lime
  • salt optional, to taste

Instructions

  1. Peel your mango and cut the fruit flesh from the seed core. Cut the mango into dice.
  2. Peel and chop your onion roughly.
  3. Use fresh rinsed jalapenos or pickled jalapenos. Slice fine or chop roughly.
  4. Rinse and chop your fresh cilantro
  5. Place all fresh ingredients into a mixing bowl and pour the lime juice over it. Season with salt to taste if you like.
  6. Mix your mango pico de gallo and keep in the fridge until serving time.

Notes

  • Use two smaller mangoes or one large mango based on availability and preference.
  • Pickled jalapenos reduce heat and add flavor, but fresh jalapenos can also be used for more spice.
  • Cilantro may be substituted with culantro for a different herbal note.
  • Adding salt is optional but recommended to enhance the other flavors.
