For the salad

  • 3 1/2 cups Mango diced
  • 1 1/2 cups avocado diced
  • 3/4 cup red bell pepper seeded and finely diced
  • 1 tablespoon jalapeño remove the seeds and ribs, then mince finely
  • 1/4 cup red onion thinly sliced
  • 1/3 cup cilantro chopped, leaves

For the dressing

  • 1/3 cup olive oil
  • 1/4 cup lime juice freshly squeezed
  • 1 tablespoon honey
  • 3/4 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt or more to taste
  • 1/4 teaspoon black pepper

Instructions

For the salad

  1. Place the mango, avocado, bell pepper, jalapeno, red onion and cilantro in a large bowl.

For the dressing

  1. Add the olive oil, lime juice, honey, chili powder, cumin, salt and pepper to a small bowl. Whisk to combine.
  2. Pour the dressing over the mango mixture and toss gently to coat. Serve immediately.

Notes

  • Prepare the salad up to 8 hours before serving, but add avocado only right before serving to prevent browning.
  • If you prefer not to use cilantro, replace it with chopped green onions for a different flavor.
