Description

Ingredients
For the salad
- 3 1/2 cups Mango diced
- 1 1/2 cups avocado diced
- 3/4 cup red bell pepper seeded and finely diced
- 1 tablespoon jalapeño remove the seeds and ribs, then mince finely
- 1/4 cup red onion thinly sliced
- 1/3 cup cilantro chopped, leaves
For the dressing
- 1/3 cup olive oil
- 1/4 cup lime juice freshly squeezed
- 1 tablespoon honey
- 3/4 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon salt or more to taste
- 1/4 teaspoon black pepper
Instructions
For the salad
- Place the mango, avocado, bell pepper, jalapeno, red onion and cilantro in a large bowl.
For the dressing
- Add the olive oil, lime juice, honey, chili powder, cumin, salt and pepper to a small bowl. Whisk to combine.
- Pour the dressing over the mango mixture and toss gently to coat. Serve immediately.
Notes
- Prepare the salad up to 8 hours before serving, but add avocado only right before serving to prevent browning.
- If you prefer not to use cilantro, replace it with chopped green onions for a different flavor.
