Description

The recipe begins with preparing a mango salsa combining diced mango, red bell pepper, diced onion (or red onion), chopped cilantro, salt, and freshly squeezed lime juice. The salsa is set aside to develop flavors. Chicken breasts are pounded to uniform thickness, brushed with olive oil and seasoned with salt, pepper, cumin, chili powder, garlic powder, and Italian seasoning blend to add warmth and herb notes.

Chicken is then grilled over medium-high heat or baked at 375 degrees Fahrenheit until cooked through and juicy. The cooking method ensures even cooking and allows exterior seasoning to form a flavorful crust while keeping the inside tender.

  • 4 chicken breast pounded to even ¾ inch thickness or less, large, boneless, skinless
  • 2 tablespoons olive oil
  • salt to taste
  • black pepper to taste
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • ½ teaspoon Italian blend seasoning (or make your own with dried basil, dried thyme, dried oregano)

Mango Salsa

  • 2 Mango
  • ½ onion diced, or red onion
  • 1 red bell pepper diced
  • 1 cilantro chopped, bunch
  • ¼ teaspoon salt
  • lime juice of 1

Instructions

  1. In a medium bowl stir together all of the ingredients for the mango salsa, set aside. 
  2. Drizzle chicken with oil, then season with salt and pepper to taste. Stir together cumin, chili powder, garlic powder, and Italian seasonings. Season chicken with spices. 
  3. GRILL chicken over medium-high heat, or BAKE at 375 degrees for 20 minutes or until cooked through. Serve immediately with mango salsa.  

Notes

  • Store leftover mango salsa covered in the refrigerator for up to three days.
  • For added heat, include 1 seeded, diced jalapeño in the mango salsa.
  • Ensure chicken breasts are pounded to even thickness for uniform cooking.
  • Chicken can be grilled or baked; bake at 375°F for about 20 minutes until cooked through.
