Mango Shrimp Ceviche Recipe with Pineapple

This Mango Shrimp Ceviche combines shrimp marinated in lime juice with fresh mango, pineapple, tomato, onion, cilantro, and garlic for a refreshing, citrusy appetizer. The acidity from lime juice 'cooks' the shrimp, while the fruit adds sweetness and brightness balanced by savory onion and herbs. Adding diced avocado at the end provides a creamy contrast to the bright, textured ceviche.

Description

The recipe features shrimp that is cut into small pieces and marinated in lime juice until opaque, indicating it has been cured. Alongside the shrimp, diced tomato, chopped cilantro, pineapple chunks, mango, diced onion, and minced garlic are combined to create a vibrant, fresh mixture. Once the shrimp has firmed up, it is drained and mixed with the avocado to add a creamy texture that softens the sharp citrus and acidity.

The ceviche is served chilled and seasoned with salt and freshly ground black pepper to taste. This dish highlights a balance between tartness from lime, sweetness from tropical fruit, and savory notes from onion and garlic, making it a light and refreshing starter or snack.
