Mango, Strawberry, and Avocado Arugula Salad

Ingredients

For the Salad:

  • 6 cups arugula
  • 1 Mango peeled, pitted, and sliced, large ripe
  • 1 cup strawberries sliced
  • 1 avocado peeled, pitted and sliced, large
  • red onion thinly sliced, half a small

For the Cilantro Lime Dressing:

  • 1/4 cup olive oil
  • 1/4 cup lime juice about 2 limes, fresh
  • 2 tablespoons cilantro chopped
  • 1 clove garlic minced
  • 1 teaspoon agave syrup can use honey
  • 1/8 teaspoon chili powder
  • 1/8 teaspoon cumin ground
  • salt to taste
  • black pepper to taste

Instructions

  1. Place arugula in a salad bowl or on individual salad plates. Top with mango, strawberries, avocado, and red onion.
  2. In a medium bowl, whisk together olive oil, lime juice, cilantro, garlic, agave, chili powder, and cumin. Season with salt and black pepper, to taste.
  3. Drizzle salad with Cilantro Lime Dressing and serve immediately.
  4. Note-to keep the recipe vegan, use agave and not honey. This salad is best the day it is made.
