Mantecadas De Plátano (Banana Muffins)

Mantecadas De Plátano are banana muffins topped with a crumbly mixture of brown sugar, cinnamon, and butter. The batter combines mashed bananas with flour, baking soda, baking powder, cinnamon, sugar, egg, and canola oil to produce moist muffins with a tender crumb. The crumb topping adds a slightly crunchy texture and a touch of cinnamon spice. These muffins bake at 375 °F until golden and are ideal for breakfast or snack times where a comforting banana flavor is desired.

Description

The Mantecadas De Plátano (Banana Muffins) recipe features a batter made by folding mashed bananas, sugar, egg, and canola oil into a dry mixture of flour, baking soda, baking powder, cinnamon, and salt. A crumb topping made from brown sugar, flour, cinnamon, and cold butter is crumbled on top before baking. Baking at 375 °F in lined or greased muffin cups yields muffins that are moist and tender inside with a sweet, spiced crumb on top. The combination of banana and cinnamon provides warm, sweet flavors enhanced by the crunchy topping.

The crumbly topping adds texture contrast to the soft muffin. The baking soda and powder ensure a light rise while the cinnamon in both batter and topping tie the flavors together. These banana muffins are best enjoyed fresh but can be stored for a mildly sweet breakfast or snack option.

Ingredients

Servings

For the Crumb

  • cup brown sugar packed
  • 2 tablespoons all-purpose flour
  • ¼ teaspoon ground cinnamon
  • 1 tablespoon butter cold

For the muffins

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • 3 banana mashed
  • 1 tsp. vanilla
  • ¾ cup white sugar
  • 1 egg lightly beaten
  • cup canola oil

Instructions

  1. Preheat oven to 375 °F. (190 °C) Line a 12-cup standard muffin tin with paper liners or coat with nonstick spray; set aside.
  2. To make the crumb topping by combining the brown sugar, flour, and cinnamon. Add the butter and with your hands, blend it until mixture resembles coarse cornmeal. Set aside.
  3. In a large bowl, mix together flour, baking soda, baking powder, cinnamon and salt. In another bowl, beat together bananas, sugar, egg and canola oil. Stir the banana mixture into the flour mixture just until moistened.
  4. In another bowl, smash the bananas with a fork then add the sugar, egg and canola oil. With a whisk or fork, mix all ingredients well. Stir the banana mixture into the flour mixture just until moistened.
  5. Gently fold the banana mixture into the flour mixture and stir until combined. It may be a little lumpy due to the banana but that's okay.
  6. Scoop the batter evenly into the muffin tray and sprinkle with reserved crumb topping.
  7. Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.
