  • 7 lices Bacon diced
  • 2 cups all-purpose flour
  • 1 Tbsp baking powder
  • 1 tsp kosher salt
  • 3/4 tsp garlic powder
  • 2 Tbsp butter cut into small pieces and chilled, unsalted
  • 2 Tbsp bacon grease reserved from cooking bacon
  • 1 cup cheddar cheese shredded sharp
  • 1/4 cup maple syrup
  • 1/2 cup + 2 Tbsp buttermilk cold

Butter topping

  • 2 Tbsp butter melted, unsalted
  • 1 tsp parsley fresh, minced
  • 1/2 tsp garlic powder
  • kosher salt pinch

Instructions

Cook bacon

  1. Cook bacon in a skillet over MED heat, until crispy (or in whichever way you usually prepare bacon). Remove cooked bacon to a paper towel lined plate, and pour grease into a small shallow bowl. Place bowl of bacon grease in the freezer to chill.

Prepare

  1. Add cubed butter to freezer to chill as well.
  2. Preheat oven to 400°F and line a baking sheet with parchment paper. Set aside.

Make biscuit dough

  1. To a food processor, add flour, baking powder, salt, and garlic powder. Add chilled butter and bacon grease, pulsing a few times, or until pea-sized lumps form.
  2. Add bacon and cheddar cheese, and pulse just 1-2 more times to combine.
  3. Transfer flour mixture from the food processor to a large bowl. Make a well in the center, and pour in maple syrup and buttermilk.
  4. Mix well using a wooden spoon or rubber spatula, adding more buttermilk if the mixture is very dry.

Scoop and bake biscuits

  1. Scoop out dough in approximately 1/4 cup portions, adding them to the prepared baking sheet, leaving some room in between each biscuit.
  2. Bake for about 15 minutes, or until lightly golden.

Add topping

  1. Combine topping ingredients (melted butter, parsley, garlic powder, and salt), and brush onto cooked biscuits.

Cool

  1. Transfer biscuits to a cooling rack to cool, or serve warm.

Notes

  • This recipe yields about 12 biscuits, suitable for sharing or meal accompaniment.
  • If using pre-cooked bacon, ensure you have bacon grease available or replace it with an equal amount of unsalted butter.
  • You can cut in butter and bacon grease by hand using pastry cutters or forks if a food processor is unavailable.
