Maple Bacon French Toast Bake

This Maple Bacon French Toast Bake layers brioche cubes with crumbled cooked bacon and soaks them in a mixture of eggs, egg whites, almond milk, vanilla, spices, protein powder, and sweeteners. After an overnight chill to absorb flavors, the bake is cooked to create a soft center with a slightly crisp top, combining savory bacon with maple sweetness in a protein-enriched breakfast casserole.

Description

The bake begins by cooking center-cut bacon in the oven until crispy and crumbling it once cooled. Brioche bread cubes are arranged in a baking dish layered with a third of the bacon crumbles and topped with remaining bread. A custard mixture whisked together from whole eggs, egg whites, unsweetened almond milk, vanilla, cinnamon, nutmeg, vanilla protein powder, maple syrup, brown sugar alternative, and liquid stevia is poured evenly to soak the bread cubes thoroughly. This combination balances sweet and savory notes and boosts protein content.

Chilling the assembled dish covered overnight allows the bread to fully absorb the custard, resulting in a tender texture throughout after baking. The maple syrup and spices create a warm sweetness complemented by the savory, smoky bacon folds throughout the dish. Baking at 350°F with a preheated oven finishes the casserole with a gently set custard.

The dish is suitable for making ahead and reheating for breakfasts or brunches, offering a rich, satisfying meal. The recipe notes suggest liquid stevia blends better with liquids for an even sweetness, but other sweeteners can substitute as desired.

Ingredients

Servings
  • 12- oz. Bacon center cut
  • 1 (16-oz.) brioche bread cut into 1-inch cubes - I used Sara Lee, loaf, bakery
  • 6 egg large
  • 3/4 cup egg white, 180g
  • 2 cups almond milk unsweetened, 480g
  • 3/4 cup protein powder vanilla
  • 1/3 cup maple syrup I used sugar-free, 80g
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp liquid stevia see notes
  • 2 Tbsp brown sugar I used Truvia, 24g

Instructions

Cook The Bacon:

  1. Preheat your oven to 400 degrees F. Line a baking sheet with parchment paper, then place the bacon on the sheet side-by-side, without overlapping.
  2. Cook the bacon for 18 to 20 minutes, or until it's reached your desired level of crispiness. Then transfer the bacon to a plate lined with paper towels. Once cooled, crumble the bacon.

Prepare the French Toast Bake:

  1. Spray a 9x13” baking dish with nonstick cooking spray. Arrange the bread in a single layer in the baking dish. Sprinkle 1/3 of the bacon crumbles, then add the remaining bread on top.
  2. In a large bowl, whisk together the eggs, egg whites, milk, protein powder, syrup, vanilla, cinnamon, nutmeg and liquid stevia. Pour the egg mixture over the bread in the baking dish, spreading it around so the liquid saturates the bread. Sprinkle the remaining bacon over top. Cover and refrigerate overnight. If you don’t have time to let it soak overnight you can get by in 30 minutes.
  3. Preheat the oven to 350 degrees F. Uncover the baking dish, sprinkle with the brown sugar and bake for 35-45 minutes or until baked throughout. Cover with aluminum foil if it still needs longer and you wish to not brown the top anymore.
  4. Serve warm drizzled with more syrup, if desired.

Notes

  • Liquid stevia works best for even sweetness in the custard but can be replaced with your preferred sweetener.
  • Allow the assembled dish to soak overnight for best texture, though a 30-minute soak can suffice.
  • Use center-cut bacon for a balanced crispness and flavor.
  • Brioche bread cubes offer a tender, rich base to soak custard well.
