Maple Cinnamon Grain-Free Granola
Description
The granola features a mixture of whole nuts and seeds—sliced almonds, shredded unsweetened coconut, chopped pecans, and sunflower seeds—combined with sea salt and cinnamon for seasoning. Maple syrup, coconut oil, and a touch of maple extract provide sweetness and binding elements. The liquid mixture is gently warmed and mixed with dry ingredients to coat evenly before baking.
Baking at 300 degrees Fahrenheit for 30 minutes toasts the nuts and dries the granola without burning. After cooling completely for at least 30 minutes, the granola crisps and can be crumbled to desired sizes, suitable for topping yogurt, eating as a snack, or adding to cereal bowls.
The recipe allows substitutions such as swapping coconut oil for other neutral oils and replacing pecans with walnuts or sunflower seeds with pumpkin seeds, offering flexibility based on preference or availability.
Ingredients
- 1 1/2 cup almonds sliced
- 1 cup coconut unsweetened, shredded
- 3/4 cup pecans raw, roughly chopped
- 1/2 cup sunflower seeds raw
- 1/2 tsp salt sea salt
- 2 tsp cinnamon
- 1/4 cup maple syrup
- 1 tbsp coconut oil
- 1/2 tsp maple extract
Instructions
- Preheat oven to 300F and line a baking sheet with parchment paper
- In a large mixing bowl combine almonds, coconut, pecans, sunflower seeds, salt and cinnamon
- In a small mixing bowl combine maple syrup and cococnut oil and melt for 45 seconds in the microwave
- Mix thoroguhly and mix in the maple etract
- Pour liquid mixture over dry and mix together
- Spread onto baking sheet in one even layer - its okay if the ingredients all touch eachother, thats how you get crumbles
- Bake at 300F for 30 minutes
- Remove the baking sheet from the oven and allow to cool completely - at least 30 minutes - and then crumble into peices
Notes
- Neutral vegetable oil can replace coconut oil if preferred.
- Walnuts can be used instead of pecans, and pumpkin seeds instead of sunflower seeds.
