Maple Cinnamon Oatmeal Recipe (Steel Cut Oats)

Maple Cinnamon Oatmeal uses steel cut oats toasted in butter and cooked slowly in boiling water before finishing with milk, buttermilk, cinnamon, and maple syrup. The texture is creamy with a touch of sweetness and warming spice, topped with fresh fruit for a filling breakfast option.

Description

Maple Cinnamon Oatmeal Recipe involves first toasting steel cut oats in butter, which adds a subtle nutty flavor. The oats are then simmered covered in boiling water for 20 minutes to soften evenly. A mixture of whole milk and buttermilk is added next with salt and the oatmeal is cooked uncovered for an additional 10 minutes, stirring carefully to maintain texture without overmixing. Finally, cinnamon and maple syrup are stirred in to provide warmth and sweetness.

The oatmeal is served topped with fresh fruit such as sliced peaches and raspberries, adding bright flavor and natural sweetness. The preparation results in a creamy oatmeal with a slightly chewy texture from the steel cut oats.

This oatmeal suits a hearty breakfast, providing satisfying texture and flavor combining the tang from buttermilk with the maple and cinnamon notes. The recipe benefits from careful stirring and maintaining a covered pan during simmering to prevent drying out.

Keep the pan covered while cooking to prevent steam from escaping and drying out the oats, especially when using a large saucepan.

Ingredients

Servings
  • 1 Tbsp butter unsalted
  • 1 cup steel cut oats I used Bob's Red Mill brand, dry/un-rinsed
  • 3 cups water boiling
  • 1/2 cup milk whole
  • 1/2 cup buttermilk low-fat
  • 1/4 tsp salt
  • 1 Tbsp maple syrup plus more to taste
  • 1/4 tsp cinnamon plus more to taste
  • 2 cups Fruit I used sliced peaches and raspberries, fresh
  • 2 cups Berry I used sliced peaches and raspberries, fresh

Instructions

  1. Set a medium saucepan over medium heat. Melt in 1 Tbsp butter then add 1 cup oats and toast for 2 min, stirring occasionally.
  2. Add 3 cups boiling water then reduce heat to a simmer, cover and cook on low 20 min without stirring.
  3. Combine 1/2 cup whole milk with 1/2 cup buttermilk. Pour over the oatmeal and add 1/4 tsp salt then stir just until incorporated. Cook another 10 min uncovered, stirring gently once or twice - don't over mix.
  4. Finally, stir in 1/4 tsp cinnamon and 1 Tbsp maple syrup, or to taste. Divide among 4 bowls and top each bowl with about 1/2 cup of fresh fruit (plus a sprinkle of cinnamon and drizzle of maple syrup if desired)

Notes

  • Keep the saucepan covered throughout cooking to retain steam and moisture for tender oats.
