Maple Cinnamon Quick Bread

Cinnamon bread is delicious, especially with the addition of maple.

Ingredients

For the bread:

  • 2 1/4 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 1 cup pure maple syrup
  • 1 cup buttermilk
  • 2 large egg
  • 1 teaspoons vanilla extract
  • 1/4 cup butter browned
  • 1/4 cup butter cold, cubed
  • 1 tablespoon cinnamon

For the icing:

  • 1 cup powdered sugar
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 350 degrees.
  2. Sift together the flour, baking powder, baking soda, cinnamon, and salt in a large bowl.
  3. In a medium bowl, whisk together the maple syrup, buttermilk, eggs, and vanilla. Slowly whisk in the browned butter.
  4. Combine the wet and dry ingredients and mix until just combined.
  5. In a small bowl, cut the butter and cinnamon together until you have small pea sized chunks.
  6. Fold into the batter.
  7. Pour into a greased 9x5 loaf pan.
  8. Bake for 45 minutes or until a toothpick comes out clean.
  9. Allow to cool for 15 minutes before icing.
  10. To make the icing, whisk together all ingredients. Add more sugar or cream to reach the desired consistency.
  11. Drizzle over the top of the bread or spread on individual slices.
