Maple Coconut Granola

Maple Coconut Granola combines rolled oats and coarsely chopped almonds with flaked coconut, cinnamon, and salt, coated in a mixture of coconut oil, pure maple syrup, and vanilla. Baked until crisp and golden, this granola offers a balanced sweetness with nutty and tropical notes, perfect for breakfast or snacking.

Description

This granola recipe starts by mixing old-fashioned oats with chopped almonds and flaked coconut, along with cinnamon and a pinch of salt to season. The wet ingredients—coconut oil melted with pure maple syrup and vanilla extract—are stirred together and mixed thoroughly into the dry ingredients to coat evenly.

The mixture is spread in a thin layer on a baking sheet and baked at 350°F for 20 minutes, with occasional stirring to ensure even toasting and prevent burning. Cooling crisps up the granola, providing a crunchy texture with chewy coconut flakes and crunchy nuts offering variety.

The blend of maple syrup and vanilla adds warm sweet flavors balanced by the toasted oats and coconut. This granola stores well in an airtight container and can be eaten plain, with milk, or as a topping for yogurt or desserts.
